These Spooky Pistachio Cookies are the perfect Halloween treat — soft, chocolatey cookies topped with a creamy layer of Nuuva Pistachio Spread, a swirl of White Chocolate Ganache, and a drop of Chocolate Ganache to create a fun “eyeball” effect. Sweet, nutty, and just a little spooky — they’re a playful way to impress guests or enjoy a frightfully delicious dessert at home.

Ingredients

1/2 cup (115 g) unsalted butter, softened
1/2 cup (100 g) brown sugar
1/4 cup (50 g) granulated sugar
1 large egg
1 tsp vanilla extract
1 1/4 cups (160 g) all-purpose flour
1/4 cup (30 g) cocoa powder
1/2 tsp baking soda
Pinch of salt

Nuuva Pistachio Spread
1/2 c cup Nuuva White Chocolate Ganache
2 tablespoons Nuuva Chocolate Ganache (for the pupil)
Optional: cocoa powder or chocolate drizzle for decoration
Directions
Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a medium bowl, beat the butter, brown sugar, and granulated sugar until light and creamy. Add the egg and vanilla extract and mix until smooth.
In another bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually add the dry ingredients to the butter mixture and mix until just combined.
Scoop small portions of dough onto the prepared baking sheet and flatten slightly. Bake for 8–10 minutes, or until the edges are set but the centers remain soft. Let cool completely.
Spread a generous layer of Nuuva Pistachio Spread on top of each cooled cookie.
Add a small spoonful of Nuuva White Chocolate Ganache in the center to form the eyeball.
Place a small drop of Nuuva Chocolate Ganache on top as the pupil.
Optional: dust with cocoa powder or drizzle melted chocolate for decoration. Chill for 10–15 minutes before serving.
